Your cheesecake, most of the time, is shipped frozen from the manufacturer to ensure a quality delivery. They want their product to arrive at your door (or your gift recipients door) in the best possible condition. Shipped frozen your cheesecake will stay fresh for up to 2 days (in the winter maybe 3 days) in the container that it is shipped in.
When you receive your cheesecake it probably has thawed some during shipping so remove it from the shipping carton and refrigerate until ready to enjoy (up to 5 days) or...
You may freeze your cheesecake for up to 3 months. Take your cheesecake from the freezer the night before you plan to serve the cake and place in refrigerator to thaw slowly overnight.
The best cheesecake flavor comes out when it is served at room temperature or just slightly chilled. Remove the cheesecake from the refrigerator about thirty minutes to one hour before serving.
Cutting a cheesecake into serving pieces requires a little more care than cutting a regular layer cake. Here are some suggestions for cutting your cheesecake at home...
1. Take a chefs knife and hold over burner on stove, just long enough to heat up the blade or you could hold the knife blade under running hot water till the blade heats.
2. Slice the cheesecake completely in half first, this will make pulling the slices out much easier.
3. Wipe the blade of the knife off after each slice, starting each cut with a clean heated blade will result in a much nicer looking slice of cheesecake.
4. If you would rather not use a knife, or are not able to cut your cake with the aid of hot running water or a stove burner, you can use dental floss or nylon fishing line. Hold the string very tightly with both hands and slowly and carefully run the string down through the cake. Pull the string out once you get to the bottom rather that trying to pull it back up through the cut.
5. Only slice as many pieces as you will use at one time, the rest of the cake will keep much better if not sliced. If you should need to re-freeze your left over piece, first wrap the cake completely airtight with plastic wrap and then cover completely with heavy-duty foil.
Defrosting a cheesecake has to be done slowly and the right way or your cheesecake will taste nothing like it did when you first got it. To defrost place your cheesecake, still wrapped as described above in your refrigerator and let it sit undisturbed for at least 12 hours. Then unwrap the cheesecake, put it back in the refrigerator until completely defrosted. Remove from the refrigerator at least thirty minutes before serving.
